Makes four 12" freezable shells.
2 tbs. sugar
2 cups lukewarm water
1/2. oz dry yeast
4 1/2 cups white flour
2 cups cornmeal
2 tsp. salt
1/2 cup olive oil
Dissolve sugar in water. Add yeast to dissolve and let stand 5 minutes at room temperature. Combine 4 cups flour, cornmeal, salt. Add yeast mixture and oil. Beat by hand or mixer until soft dough forms. Knead dough, adding remaining flour as necessary. Let dough rise until double in size by placing in covered mixing bowl and leaving at room temperature. Then, punch down dough. Shape into ball. Divide into fourths. Can be wrapped and frozen at this point for future use. Roll out and shape each ball with fingers into 12" pizza round.
