

This recipe serves 4
1 lb. SeaSeald or James Island Crabmeat
1-1/2 tbs. fresh lime juice
3 tbs. olive oil
1 tbs. chopped cilantro/coriander
2 tsp. chopped fresh mint
Salt, pepper
Pickapeppa or Tabasco sauce
1 ripe mango
1 cucumber
Garnish: 1 tbs. chopped peanuts,
fresh whole mint, coriander leaves
Put crabmeat in bowl, examine, discard any shell. Add 1 tbs. lime juice, half the olive oil, 2/3rds the cilantro & mint, salt & pepper to taste,10 drops of hot sauce. Toss lightly. Arrange in one large or 4 small serving bowls. Chill. Peel, pit and dice mango. Peel, seed and dice cucumber. Add both to bowl with rest of lime juice, olive oil, chopped cilantro & mint,10 more drops hot sauce, salt & pepper to taste.
Mix. Top crabmeat with mixture. Sprinkle with peanuts.
Garnish with whole mint, coriander leaves.
